Paccheri with Burrata & Basil Oil

This is the dish you make when you want to impress someone without spending the whole evening in the kitchen. Burrata is already perfect — your job is simply not to ruin it. The basil oil brings a vivid green freshness that cuts through the richness, and the lemon zest ties everything together with a brightness that makes the whole bowl sing.

// Ingredients

Paccheri 500gBurrata 2 ballsOlive Oil 3 tbspFresh basilLemon zest

// Method

    Blend a large handful of fresh basil with 3 tbsp of olive oil and a pinch of salt until smooth. Set aside.

    Cook paccheri in well-salted boiling water until al dente. Reserve a cup of pasta water.

  3. 03

    Drain the pasta and toss with half the basil oil and a splash of pasta water.

  4. 04

    Divide the pasta between two warm bowls.

  5. 05

    Tear a burrata ball over each bowl, letting the creamy centre spill out.

  6. 06

    Drizzle the remaining basil oil over the top and finish with lemon zest.

  7. 07

    Serve immediately — burrata waits for no one.
